Instructions
- In a large bowl sift one and ½ cups flour, add 4 tbsps. Of baking powder and salt. Mix all ingredients well and set to the side.
- Mix the dry and wet ingredients. Fold the batter together until there are no large lumps.
- For cooking pancakes heat a heavy-based pan like cast iron over medium-low heat.
- Add a little butter and ⅓ cup of the pancakes batter in a hot pan.
- Cook the fluffy pancake for 2-3 minutes and flip to another side.
- Serve the fluffy pancakes, stacked high topped with butter and maple syrup. Enjoy.
Notes
You can add your favorite topping to the pancakes such as raspberries, blueberries, whipped cream, or chocolate chips.
Pro Tips:
Preheat good-quality nonstick pan on medium heat first. Once it’s hot, lower the temperature down to low-medium heat. Wait for about two minutes. Grease the pan with butter and wipe away excess butter with a paper towel. Pour pancake batter from the middle to outer in a circular motion so that the batter spreads perfectly for a pancake. Let the pancakes cook well. Don’t cook on high heat or overheated pan, or flip too soon. Let the pancake cook until golden brown color from one side. When bubbles start forming on top just flips to others. Take a good spatula to flip pancake gently. Use your wrist movement to flip them gently instead of full-arm force. Enjoy this yummy breakfast with a cup of hot tea or coffee and satisfied your hunger with a healthy breakfast.
