Ingredients
- 1 Cup Unsalted butter
- 1+ ½ Cups Sugar
- 3 Large size Eggs
- ½ cup Mayonnaise
- 5 oz. Chocolates chunks optional
- Raspberries for garnish
Dry ingredients:
- 1+ ½ Cups All purpose flour
- 1 Cup Cocoa powder Dutch-processed
- 1 tsp Salt
- 1+ ½ Tsp Baking soda
- ½ Tsp Baking powder
Wet ingredients:
- 1 tbsp Vanilla extract
- 1 tbsp Espresso powder
For the buttercream frosting:
- 1+ ½ Cups Unsalted butter
- 1 tbsp vanilla extract
- ½ cup Cocoa powder Dutch-processed
- 5 cups Powdered sugar
- 4-5 tbsps Milk
Instructions
Step 1: Dry Ingredient preparation:
- In a large bowl, sift 1 and ½ Cup of flour along with Dutch-processed cocoa powder.
- Add 1 tsp. Salt, 1 and ½ tsp. Baking soda and ½ tsp. baking powder. Mix them well and set aside.
Step 2: Wet Ingredient preparation:

- Take a large bowl; add 1 Cup of Unsalted Butter along with 1 and ½ cups of granulated sugar.
- Mix well until sugar completely dissolves in the butter and evenly cream together.
- Break 3 eggs one by one in the buttercream and beat well until mix become super buttery and creamy.
- Add ½ cup of Mayonnaise for the extremely moist and rich texture.
- Add dry and wet ingredients side by side and mix well in the batter.
- Divide the dough evenly in the cake pans and bake it for 35 minutes.
- Take a skewer test and cool the cake on the rack.
Buttercream frosting:
- In a large bowl take 1 and ½ cup of unsalted soft butter. Add 1 tbsp. of vanilla extract. Add ½ cup of Dutch-processed cocoa powder by batches and beat the butter evenly.
- Add 5 cups of powdered sugar spoon by spoon while beating the frosting.
- Add 4-5 tbsps. of milk thoroughly while adding powdered sugar and beating.
Assembling or frosting the cake:

Opted for the Dutch-processed cocoa instead of natural cocoa powder as it is dark in color and rich in flavor.
Shift the all dry ingredients as it aired the dry ingredients as well as remove the big lumps.
