  • 2 Cups Carrot finely grated
  • ¾ Cups Oil
  • 1 Cup brown sugar light
  • ½ Cup Sugar
  • 3 Eggs
  • 1 tsp Vanilla essence
  • 2 cups All-purpose flour
  • 2 tsp Baking powder
  • ½ tsps Baking soda
  • ½ tsps Salt
  • ½ tsp Allspice
  • 1 tsp Cinnamon powder
  • ¼ tsp Cloves Ground
  • ¾ cup Walnuts Ground

For cream cheese frosting:

  • 8 ounce Cream cheese
  • ¼ cup Butter
  • 3 cups Icing sugar sifted
  • 1 tsp Lemon juice
  • 1 tsp Vanilla essence


  • Preheat oven at 350 F.
  • Take two 9 inches baking pan and lined with parchment paper.
  • In a large bowl take ¾ cup of vegetable oil. Add 1 Cup of light brown sugar along with ½ cup of granulated sugar in the oil.
  • Add three large eggs with one tsp. of vanilla extract into the oil.
  • Whisk the eggs well that sugar completely dissolves in the oil and creamy texture appears.
  • In another large bowl, add 2 cups of all-purpose flour Along with 2 tsp. Of baking powder and ½ tsp. of baking soda.
  • Add ½ tsp. of salt, ½ tsp. of allspice, one tsp. of cinnamon powder, and ¼ tsp. of grounded cloves for great taste.
  • Mix the dry ingredients well.
  • Add 2 cups of finely grated fresh carrots in the dry mix and mix well the crumbles.
  • Add flour mixture to the egg mixture and mix gently.
  • Add ¾ cup of toasted walnuts into the batter and mix well.
  • Pour the cake batter equally into the pan and spread the batter into the pan.
  • Place the baking pans into the oven and bake the cake for 25 to 30 minutes.
  • Once the cake is made, take a skewer to testify the skewer comes out clean your yummy cake is ready.
  • Cool the cakes for a half-hour in the pan and then flip out into the cooling racks to completely cool the cake.

Preparation of Cream Cheese Frosting

  • In a bowl take 8 ounces of cream cheese.
  • Add ¼ cup of soft unsalted butter.
  • Mix well until getting creamy texture.
  • Scrape the batter off from the sides.
  • Add half of the sifted icing sugar into the mixture and mix well.
  • After that add one tsp. of lemon juice and one tsp. of vanilla extract.
  • Mix the juices gently into the cream.
  • Add half of the remaining icing sugar and mix well. Sweet and fluffy cream cheese frosting is ready for the cake.

Glaze the Carrot Cake with Cream Cheese:

  • Take the 1st cake and place it over the cake board on a rolling stand or you can just use a plate. Add a generous amount of cheese frosting in the center.
  • Gently spread the filling towards the edges.
  • Place the second cake on the top carefully and frost it lightly.
  • With the help of a spatula, spread frosting to the sides of the cake and straight edges with the icing.
  • You can create the swirls designs of just plain frosting as per your liking.
  • For the finishing, Lift the cake and coat the toasted crushed walnuts generously to the cake edges all over.
  • Put the cake in refrigerate for a couple of hours for the setting of cream cheese frosting.
